By day, 32-year-old Lindsey Palar works a 9-to-5 as the diversity training and education director at her local college, Western Michigan University. By night, and weekends too, she manages OPEN Vegan Eats, a Kalamazoo, Michigan food business that she cofounded with her partner, Paul Vugteveen. As bootstrappers, the days are long and nights are tough. Palar says there are moments when she and Vugteveen have to remind themselves to trust the process.
