Roots is the restaurant York needed. The sister site to Tommy Banks’ Michelin-starred The Black Swan at Oldstead, co-owner Matthew Lockwood joined the Banks family to open a restaurant in the city centre that encapsulates The Black Swan’s farm to table ethos, but making it slightly more casual.
Expect dishes such as wild garlic toast with lardo and charcoal emulsion, lamb and fermented turnip bao, salt beef with Winchester cheese and mustard and gherkin puree and Douglas Fir parfait. But be warned, the beauty of this menu means that it works not just around three key seasons, but what the team have grown at the farm, meaning it can change at any moment.
