Executive Chef Jaime Gonzalez shares a behind-the-scenes look at Carriqui, from pit barbacoa and cabrito to house-made tortillas, plus a side dish recipe.
“San Antonio is a small town in a big city; it’s a very family-oriented city, laid-back. I like the pace of life, serving guests and creating experiences more than anything,” Gonzalez said.
“For the barbacoa, we use beef cheek and also brine it in salt and sugar, then let it soak two to three hours, then submerge it in the pit for 12 hours till the fat separates,” Gonzalez said. “This is not the barbacoa tacos where the tortillas fall apart with grease dripping down; it just has some fat.”
As a child, he and his great-grandfather traveled to Baja California and Zacatecas in Mexico, where Gonzalez learned about his culture.
