All of the tomatoes I grew from plants I bought at a nursery all ripened with very thick skins . What causes this? I haven’t had this problem before.
Make sure the vines are not water-stressed. I like to water in the early morning and use a thick layer of grass clippings as mulch. The mulch will allow water to percolate into the ground instead of immediately evaporating off the soil surface. It also protects the roots from the baking heat of the sun.
As long as you followed a recipe from a reputable source, used an actual pressure canner , and the jars sealed, you should have no worries. Spoilage in home-canned goods is usually, but not always, obvious. Remove the rings before storing filled jars. This allows you to see immediately if a seal has failed. If the jar is unsealed, or if there’s visible mold, an awful smell, foaming, or anything that doesn’t look right, discard the contents
