Custom Meats opened just in time for the holidays.

The University Park shop on Lovers Lane near the Dallas North Tollway opened in early November 2022, just in time to sell whole turkeys, briskets and prime rib during the holidays. Year-round, the shop sells house-ground sausages, hamburger meat, and carved-and-ready cuts like hangar steak, Boston butt and New York strip.
Cutshall and his wife Kate Cutshall opened the first Custom Meats in a New York City suburb in Connecticut, where they formerly lived. Jeff’s new CFO job in finance moved the family to North Texas a few years ago, and they decided to open a second Custom Meats once they saw a need in University Park.Most of the animals, except for this year’s turkeys, are raised within about 100 miles of the shop, in small towns like Campbell, Winnsboro and Saltillo.
Custom Meats will also dry-age steaks for 35 days. Customers can ask to age steaks longer, rent-free.“You can buy it, we’ll put your name on it, and you can dry age it here as long as you want,” Cutshall says. Gourmands, take note.It’s a concise place, no frills. “We’re not a social club, not a restaurant. This isn’t a bar. We are here to serve amazing meats,” Cutshall says.
