Outstanding! To those who spent 2 or 3 hours on this it can be done from first onion slice to out of the oven in about an hour and 15 minutes with some concurrent prep and cooking steps. Start the oven and water to boil at the same time. Preheat pans so you’re not waiting for that. While sautéing onions cut the mushrooms. While sautéing the those together with sherry start the butter melting for the roux.
