12102 W Thunderbird Rd, El Mirage, AZ 85335Chef Edson Garcia was homeless just four years ago. Today, he’s griddling some of the best tacos in the west Valley for a devoted stream of regulars. Though Garcia is from Veracruz, his food doesn’t betray special allegiance to any one region of Mexico. His shop in El Mirage, about 30 minutes west of Phoenix, is small but comfortable.
The space is anchored by a bar that wraps around an open kitchen, where glass fridges display Garcia’s rainbow of chilled produce, horchata, and agua frescas. His al pastor is mighty, making use of pineapple vinegar and pork belly, while tacos come layered with three kinds of salsa. There is an intricate secret menu beyond what Garcia writes on the posted chalkboard, so be sure to ask what else he’s offering when you visit.
