"Winnowing" the cocoa beans - stripping the outer shells from the beans - comes after the roasting. The duty belonged to Linda LeFort on Saturday at the second Fete du Chocolat at the Fortress of Louisbourg. Visitors were treated to samples from chocolate makers, information on cocoa's history at the Fortress and even the opportunity to drink the same cocoa blend French soldiers consumed for energy before battle in the 18th century.
Gabrielle Breault hands out a sample of chocolate she made with her Kentville-based business, Petite Patrie Chocolate, at the Fortress of Louisbourg's Fête du Chocolat on Saturday. Breault said being at the event was a"full circle" moment for her as she has an avid interest in history. “This is one of the first ports of entry where chocolate came to our shore. So I think it should be celebrated.
“They thought they had to make some kind of example out of him. Then the judge made the ultimate decision, deciding that he should be hung,” Shee said, noting the stonecutter escaped before being put to death. “And with chocolate,” she smiled, “well, come on. Most people feel it’s a good experience to have a bite of chocolate.”
