“She asked me to come to Kensington Palace and give her and Harry some options for the cake,” Ptak recalls. “I tried to think about the time of year that the wedding is and spring flowers, and also my favourite flavours.”

But it was while studying film at the all-female Mills College in California that Ptak discovered Chez Panisse, the Berkeley eatery that has often been cited as the best restaurant in the United States. Its founder is the legendary Alice Waters, who opened the restaurant in 1971 with a view to promote premium, locally sourced ingredients and intimate dinner party-style ambience. “Alice is really a mentor to me,” says Ptak.
