Louis-Philippe Desjardins’ family-owned business offers 12 varieties of flour, including the uniquely Canadian red fife variety, made from the only wheat Canadians of yesteryear would have milled
Desjardins owns Silo 6, a family-owned business offering stone milled flour made in Hanmer. Silo 6 began about a year ago and already offers patrons about 12 varieties of flour.
Other specialty varieties are emmer or farro, an ancient Italian grain that tastes similar to barley. Silo 6’s milling machines come from Germany and Austria. They are only about the size of one human being, so they are suited to small batch production, which works for Desjardins. Each machine costs about $7,000.
Desjardins has more plans for the small batch flour business, but as he puts it the “Silo 6 goal is to stay small, to stay efficient and to stay beautiful.” Desjardin also owns Colourful Greens on his home farm in Hanmer. His mostly hydroponically grown vegetables — like lettuce, bok choy, arugula and a smattering of herbs — are sold weekly at the Sudbury Farmers Market. The green house began three years ago.
