The fast casual restaurant, which is also focused on sustainability, is gearing up for a June debut.
Taco Uprising is the long-planned dream of Matias Gutknecht and Samuel Valdez, who met about a decade ago. is planning a June debut in Five Points, but you can catch an early taste on the evening of Friday, May 5, when owners Matias Gutknecht and Samuel Valdez open the restaurant with a limited menu for Cinco de May.
Valdez says that his grandfather's experience selling burgers alongside tacos at his stand in Mexico"simply because he loved burgers" is an inspiration for the eatery, which will focus on Mexican homestyle cooking but won't shy away from some experimentation. The menu will cover all regions of Mexico, he adds, including less common options like flor de calabasa, in which taco ingredients are wrapped in a squash blossom and grilled.
Uprising's Cinco de Mayo menu will include tacos filled with pollo verde, pork adobo and chili Colorado, a northern Mexico staple made with beef. When the restaurant opens later this summer, it will have a set menu, but Valdez also plans to introduce a rotating taco of the month.
