I have a geeky fascination with the way food transforms with cooking, a captivation I hope to never outgrow. The ultimate example of this is how an onion morphs from raw to caramelized, starting out pale, crisp, and sharp-tasting, and then turning golden, soft, and sweet. Remarkably, all it takes are the most humble ingredients — onions, oil and salt — plus heat and time.
Never ask what’s for dinner again. Get one quick recipe in your inbox Monday through Thursday to inspire delicious meals. It’s easy to accomplish but not something to be rushed. The onions need to be cooked over a fairly low heat, stirred now and then, for at least 30 minutes, and for up to an hour if you want them really dark. You don’t need to hover over the pot the whole time. Just keep an eye on them, checking in to admire their changing color, adding a splash of broth or water if the pan seems dry, and adjusting the heat as needed to prevent them from browning too quickly.
The cooked farro is then tossed with a generous helping of caramelized onions, which have been cooked with a couple of cloves of sliced garlic, thyme and a brightening splash of sherry vinegar. Some shredded Gruyère is stirred in, the mixture goes into a baking dish, and more of the nutty-tasting cheese is sprinkled on top.
