There have been Jedi who have become Mandalorians.
SCREENRANT VIDEO OF THE DAY SCROLL TO CONTINUE WITH CONTENT Summary Sabine Wren's Jedi training in Ahsoka shows a Mandalorian becoming a Jedi, but there have also been Jedi in Star Wars who have become Mandalorians. The reveal of Sabine as Ahsoka's Padawan was a shock for viewers, given the strength of her ties to her Mandalorian heritage. The Jedi are often considered the ancient enemy of Mandalorians, warring with them time and time again.
There have been other Mandalorians who have become Jedi, though. The first was Tarre Vizsla, the Mandalorian Jedi who created the Darksaber. Huyang mentions in Ahsoka episode 3 that there have also been few other Mandalorians who have trained to be Jedi in addition to Tarre and Sabine. Outside of canon, there's also been instances of the opposite, where Jedi have gone on to become Mandalorians.
Did This Ever Happen In Star Wars Canon? While the story of the Mandalorian Knights is Legends, it could very well be that a Jedi has become a Mandalorian in canon as well. There aren't any that have been identified by name just yet, with the closest being Grogu in The Mandalorian.
Perhaps as Grogu continues to train as a Mandalorian, Din or someone else close to them could discover more instances of Jedi becoming Mandalorians as inspiration for him. Sabine at least has Tarre Vizsla by name to look to in Ahsoka, along with the other Mandalorians Huyang knew who became Jedi as well. It's always fascinating to see these two cultures come together in individuals, especially given their long warring Star Wars history with one another.
