Healthy and open to the world, the BB restaurant unveils its secret recipe for spring rolls with prawns to try this fall.
Shell the prawns, remove the central casing and prick them with a wooden pick and cook them in vegetable broth. Put them in the fridge to firm them. Prepare the salmon stuffing by mixing the cream and the egg. Finely pass the vegetables through a Japanese mandolin, and add the basil, the chopped soybeans and the crushed hazelnuts. Pass the rice paper in cold water and put it on the work surface.
Put a mint leaf at the base and the stuffing on top. Place half of a prawns on the languor and close on the sides, then roll it like a spring roll. Coat them in egg white and blanch them. Reserve them in a vacuum bag. For the sweet and sour sauce, brown the oil, chopped garlic and diced bell pepper. Add the peeled and crushed tomatoes and the diced pineapple. Wet everything with the broth, pineapple juice, balsamic vinegar and the sweet soy sauce. Add sugar and put on low heat until thickened.
