is a pale peach swirl of summer in a glass with its traces of tree-plucked apricot, red fruit and honeysuckle playing softly on the nose. Then, yeast is added to each bottle, and the bottles are capped and left to . The attack is brisk and refreshing with its tiny bubbles dancing across the palate, creating an almost mousse-like creaminess in the mouth.
