Thanks to their rustic looks, dramatic heft and dominating presence, molcajetes are also a fixture at restaurants across San Antonio. They star in tableside guacamole preparations, get stuffed with tangy and refreshing ceviche or overflow with a sizzling mixture of seafood and other ingredients in a bubbling broth.
Molcajetes come in a wide range of shapes and sizes, from massive vessels holding enough food to feed a family of four to petite bowls containing a spicy pool of salsa. In many restaurants, they're presented with the food placed in a steel bowl tucked inside the molcajete, preventing ingredients from coming into contact with the porous surface. Others use molcajetes made from dishwasher-friendly metal or synthetic materials.
